Traditionally sweetened with piloncillo, an unrefined cane sugar, Calabaza en Tacha is rich in nutrients like magnesium and iron, offering more than just sweetness. In place of piloncillo, we use low-glycemic yacon and coconut sugar, providing the sweetness one would expect of a caramel, but without sacrificing flavor.
